Preserving Cilantro

I have a little patch of cilantro just really starting to grow along the side of my house.  I have picked a handful a few times and brought it inside and didn't really know what to do with it since I don't have fresh tomatoes or anything.  I picked some more today, just maybe a cup full, but I was determined not to waste it, so I googled how to dehydrate it.

It looked like I had 3 options:  To hang it and let it dry out for a couple weeks, to use a dehydrator or to microwave it.  Since it was just a small amount, I decided to microwave it and it turned out pretty good!

First you rinse it off and pat dry with a paper towel.  Then place on a paper towel on a plate and microwave for a minute at a time until it becomes a dry consistency and crumbles at the touch.  Mine only took about 1 minute and 45 seconds.  I crumbled the leaves and put them in a small jar.  I am so excited to use it.  Hopefully this spring I will have a bunch to dry in the dehydrator all at 1 time.

I searched for cilantro on pinterest and found a few things that I would like to try out.  Here they are :)

  1. Wow, that does sound easy! Cilantro is also great in soup. My Mexican neighbor makes a soup with lentils, ripe plantain cut into chunks and cilantro what is so good!

  3. Great idea! I really want to get a dehydrator this year so that I can preserve more of my herbs. I've done a few in the microwave before, but not cilantro.

  4. Teresa, we have a dehydrator, but we have never used it. And we have been married for 13 years, isn't that sad? LOL
