Blackberry Cobbler

We picked another bucket of blackberries from the farm today.  My youngest daughter and I decided to make a cobbler.  I found one online and it turned out pretty good.  I think I will still keep searching for a REALLY good cobbler recipe, but this one was very good and gets two thumbs up for very easy.  It took just a couple minutes to mix up.


It probably also would have been terrific with some vanilla ice cream or whipped cream, but we had none.  My daughter liked it too and I would definitely suggest it if you want something sweet or need to put something together really quick for company.

Blackberry Cobbler

4 C blackberries
1 tbs lemon juice
1 large egg
1 C sugar
1 C flour
Stick of butter

Preheat oven to 375.  Grease casserole dish.  Place berries in bottom of dish. Sprinkle lemon juice and few tablespoons of sugar on top of berries.  In separate bowl, stir together egg, sugar and flour.  Spoon on top of berries.  Melt butter and sprinkle on top of flour mixture.  Bake in oven for about 35 minutes or until golden brown on top.  Turned out very pretty and made my house smell so good!

  3. It was very good. Blackberries grow like weeds here, so maybe once you get some planted, you will have more than enough. They come back every year bigger and more wide spread.
