"Ice cream sandwiches"

Man I forget how the days fly by when the kids are home for the summer! Today I only had two and we decided to make ice cream sandwiches for dessert tonight.

Basically you put cool whip in between vanilla wafers or any type of cookie. Put them on a cookie sheet and freeze. Then put them in a container and stick back in the freezer. We have also used mini chocolate chip cookies. Really easy and fun for the kids to help out with.
