Gonna Eat Me a Lot of Peaches

I've been working on peaches today!

My mom, sister and all our kids went to a "peach farm" yesterday.  On the way there, my sister played that song "Peaches" and ever since then "Moving to the country, gonna eat me a lot of peaches..." Keeps playing over and over in my head.  Yesterday it was fun to sing on the way to the peach place, but today I wish my brain would pick another song! :)

I was disappointed in where we went.  I was kind of expecting a farm, but it was just a glamorized, over priced farm stand on the side of the interstate.  They had more cafe and gift shop than they did produce for sale :(  And it was expensive! But we still got peach ice cream and I bought a couple big baskets of peaches.

First I did peach jam:


Then I did canned peaches in light syrup.  My ball book said to use 5-1/2 cups of water and 1-1/4 cups of sugar for light syrup.  I was really nervous because it didn't tell me how many peaches to use, but it worked out!



And I still had several left so I looked up online and found you could freeze them with the skins and I was so happy because I was tired of peeling peaches by now.  Even though I used the easy peel method (30 seconds in boiling water, then 30 seconds in ice water, peel right off!)



I'm seeing lots of peach cobblers and smoothies and hot biscuits with peach jam in our future :)

  2. Looks great! SM buys from a farm stand in SC that ALWAYS has the BEST fruits.

    We've gone to farmers markets and bought fruit thinking it was from a farm. Big mistake. Farmers markets use the same distributors that the stores use so you've got to be careful. Last year we bought a tons of apples there and I was SO disapointed. Then SM bought from this farm stand adn the difference was amazing!

    1. Tami, I have really learned this in the past year. Like how can Alabama farmer's stands have oranges with a Florida sticker on them? HA!

  3. Oh, fresh peaches are my favorite. Our trees won't be ready until August or September.

    When I can my fruits, I don't even make a syrup. I put 1/4 cup of sugar in my jars after my peaches are in. Then I fill it up with hot water, wipe the rims, put lids on, and then water bath them. I have done that for years. I got tired of having all the leftover syrup left.

  4. Hi Kelly! Sounds like you went to Peach Park in Clanton! I live a couple hours north east from there and we have a real peach farm here. It's called Norris Farms.   5. I'm looking forward to picking peaches at our local Pick Your Own peach farm in South Carolina when my family visits in a couple weeks. Can't wait for those fresh peaches!
