We were fortunate to be given 2 big tubs of fresh peanuts this past weekend. We have never had that many at one time and I have been trying to think of what to do with them. Of course, we are currently boiling some. My oldest daughter's favorite thing on this earth is boiled peanuts. The other two like them as well, but not half as much. She can spot a "boiled peanuts" sign a mile away and we always have to stop to get some.
I looked up how to roast peanuts and found some instructions on the food network site. It said to wash the peanuts, put them in a bowl and add a little oil and salt and mix it up. Place the peanuts on cookie sheets and roast at 350 for 35 minutes. I am going to give it a try. Roasted peanuts will last a little longer than boiled.
Oh, please for me! I love peanuts salted and roasted in the shell. Very yummy!
ReplyDeleteYou are so fortunate to have 2 acres! I was just fretting over my 1/2 acre that is mostly wooded as I would love to have a large garden and can't. (plus my soil is so bad). In your november post, I think that looks like chickweed to me. Here in DE it is a common weed...although i read it is edible. Named chickweed because chickens eat them. My daughter's rabbits love them. It grows in a big bunch, so one area of them could just be one plant, not many. love,andrea

ReplyDeleteAndrea, I did figure that for a weed after it kept growing and never really looked like any herb to me. A couple of weeks ago I looked at it and there was some cilantro growing right alongside it :) I picked a bunch and hope to make some salsa.
